Lactose Free Recipes – Desserts!

Are you looking for lactose-free recipes? That desserts are left out of the diet of lactose intolerant people is simply wrong. I think almost everyone has a sweet tooth and just because your body and milk don’t get along doesn’t mean you have to go without them.

It’s hard enough looking up recipes or adjusting your current recipes to be lactose-free; creating lactose-free recipes, desserts for example, can be a bit more difficult. Many desserts require milk or a dairy product such as ice cream or topping for whipping. With a little imagination and ingenuity, you can create some very tasty treats that are lactose-free.

Recipes can be simple or they can be more complex and can be fresh or frozen. You can make smoothies, cakes, cookies, and even whipped topping. If you master the foods you can eat, it will be easy to create desserts that quickly become your favorites.

Searching through the many lactose-free recipes, desserts specifically, you’ll find a variety of flavors just like when you search for a new recipe for breakfast or dinner. A super simple recipe is to make a chocolate flavored almond milk shake and mix with ice; if you want to add a little vanilla you can.

So what do you crave or what is the occasion you would like a dessert for? Is it a birthday, a family reunion, or a potluck? Do you want to make cookies, brownies, cheesecake or chocolate truffles? If you have a hankering for a particular dessert, there is probably already a recipe created for you to follow or you can make your own. There are many lactose-free recipes, including desserts, available on the Internet, but I want to share some with you here.

The first recipe is super easy and super quick to make and only takes 3 ingredients. If you love peanut butter cookies, try this recipe: Mix together one cup of peanut butter, one cup of sugar, and one egg. Drop one tablespoon at a time onto a cookie sheet and bake for 8 to 12 minutes in a preheated 325-degree oven. You can leave them in a “drop” shape or flatten them with a fork before baking. To keep them chewy, store them in a sealed container; this recipe is also vegan and gluten-free.

The next recipe is also super easy and great for the holidays or any time of year. It is nut free and also soy free and full of flavor. Heat the following in a medium saucepan until bubbling:

29 ounces pumpkin (canned)

a cup of rice milk

¼ cup agave syrup or maple syrup

1 cup of honey

Cinnamon, nutmeg and cloves

In a separate bowl, whisk together the egg yolks until thick and creamy, then add about a half cup of the pumpkin mixture to slowly heat the egg mixture without cooking the whites. Then slowly mix the rest of the egg mixture into the pumpkin mixture. Continue cooking until this mixture has thickened. Serve warm or cold in custard dishes.

Desserts can complete a wonderful meal and are wonderful to share with others when celebrating special occasions. When looking for lactose-free recipes, desserts should not be missing and there are many to choose from.
