Diabetic Cake Recipes

CHOCOLATE CAKE

Ingredients:

3 tablespoons of butter

1/4 cup vegetable oil

3/4 cup sugar substitute

1 teaspoon vanilla

2 eggs

1 and 1/4 cups whole wheat flour

1/3 cup unsweetened cocoa

1/4 teaspoon of salt

1 and 1/2 teaspoon baking powder

3/4 cup milk

A hand mixer

A large mixing bowl

A metal cake pan

Instructions:

Start by using a hand mixer to mix the three tablespoons of butter together with 1/4 cup of vegetable oil. Blend for about 30 seconds or until ingredients are smooth.

Next, slowly add the sugar to the mixture, mixing in about 1/4 cup of the sugar at a time. After adding each bit of sugar, beat for about thirty seconds. Once you have added all of the sugar substitute, beat the ingredients for about two minutes. Add a teaspoon of vanilla and the two eggs. Beat for another two minutes.

Next, in a separate mixing bowl, you will mix the dry ingredients. First, put your 1 1/4 cup of whole wheat flour in the bowl. Add 1/3 cup unsweetened cocoa, 1/4 teaspoon salt, and 1 1/2 teaspoons baking powder.

Mix all the dry ingredients in the bowl and then slowly add it to the butter and egg mixture. Make sure to add this slowly to the mix, adding only about 1/4 cup of dry mix at a time. Blend for 30 seconds each time you add another portion of the dry mix.

Finally, you are ready to add 3/4 cup of milk to the mix. Blend for another two minutes. For the dough in a metal skillet. Bake at 350 Fahrenheit for about 30-35 minutes. Check the cake after the first thirty minutes by placing a toothpick. If the toothpick can be removed cleanly, the cake is done.

Some diabetics will add sugar-free frosting to their cake. Others may want to enjoy the taste of chocolate without additional frosting.

POUND CAKE

This next diabetic cake is easy to make and contains few ingredients. The cake will have a slight hint of vanilla flavor. However, some diabetics may choose to omit the vanilla extract or perhaps replace it with almonds or another flavoring.

3 eggs

1/2 cup unsalted butter

1 1/2 cups all-purpose flour

1/4 teaspoon of salt

1 teaspoon baking powder

3/4 cup sugar substitute

1 teaspoon vanilla extract (optional)

A large mixing bowl

A metal cake pan

Instructions:

Start by putting 1/2 cup of the butter in a large mixing bowl. Add 3/4 cup of unsweetened sugar. Use a hand mixer to mix the sugar substitute with the butter. Once the mixture is smooth, add the eggs one at a time. Beat the mixture for about a minute after each egg. Then add 1 teaspoon of vanilla extract. Beat for one minute.

Next, you will add your dry ingredients. Add 1/4 teaspoon of salt, 1 teaspoon of baking powder, and 1 and 1/2 cups of all-purpose flour. Once these dry ingredients have been added to the butter and sugar substitute, use a spoon or spatula to mix the dry powder together. Then use the hand mix for about a minute to mix all the ingredients well. Make sure the dough is smooth and without lumps.

Then add the batter to a metal loaf pan. Bake the cake at 350 Fahrenheit for about 30-35 minutes. Insert a toothpick after 30 minutes to test if the cake is done.

CARROT CAKE WITHOUT SUGAR

The third of our diabetic cake recipes is for a sugar free carrot cake. Like the cake, this carrot cake is easy to make, although the carrot cake includes more ingredients.

Ingredients:

3 cups whole wheat flour

2 cups carrots, grated

6 egg whites

1 cup unsweetened applesauce

1 cup of milk

1 cup unsweetened brown sugar (choose your favorite brand)

1/2 cup raisins (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons ground cinnamon

1 and 1/2 teaspoon extra vanilla

1 teaspoon ground nutmeg

2 teaspoons of baking soda

2 and 1/2 teaspoons baking powder

Cooking spray

Other things you will need:

A hand mixer

1 large bowl

A fork

A glass baking dish

Instructions:

Start with your large mixing bowl. Add the egg whites to the bowl and beat them with the mixer over low heat. Beat for about thirty seconds. Add the brown sugar and beat again. Next, add the unsweetened applesauce, milk, and extra vanilla. Beat until everything is well mixed.

You will use your fork to add the last ingredients. Start by adding the nutmeg, cinnamon, baking powder, and baking soda. Mix it all together with your fork. Slowly add the flour. Add the carrots. Finally, add the raisins and walnuts. These last two items are optional, and you can substitute walnuts, almonds, or any other nut for walnuts. Use your fork to stir the mixture for another 1-2 minutes. The mixture will be lumpy instead of smooth.

Drizzle on a 9×13-inch glass baking dish. Add the mixture to the plate. Bake at 350 Fahrenheit for about 35-40 minutes. Taste the cake after 35 minutes using the toothpick method.
